Today is the day of Lucia that is celebrated in Sweden every year. She is the girl who comes with the light in these dark nights of december and lights upp out minds and houses. Is more like a religious thing, a tradition taken from Italy, but became a tradition in Sweden. So I've been to a Lucia concert that was a bit of a fairy tale, because they sang so beautifuly X-mas songs. For this day we use to bake this kind of sweet bread with saffron that gives a special taste and color to the bread.
My outfit today is Lucia inspired, hope you like it.

Saffron bread -Lussekatter
Ingredients for about 48 small breads
50 g yeast
175g butter
5dl milk
1g of saffron
1 1/2 cup granulated sugar
1/2 teaspoon salt
1 egg
15-16 cups flour
Raisins for garnish
Do like this:
Preheat the oven to 225 degrees. Crumble yeast into a bowl. Melt the butter in a saucepan and add it into the bowl. Add 37° milk. Stir to dessolve it. Add the saffron, sugar, salt, eggs and most of the flour. Work the dough until it becames shinny ans smoth. Let it rise covered for about 30 min. Turn out the dough on a floured bench and bake the small breads like you can see in my pictures. Place them on baking plate with baking paper. Press a raisin into each end of the breads. Let it rise for 30-40 min. Brush with beaten egg on the top of the breads. Bake the breads in the middle of the oven 5-7 min or until they get color.
